β-1, 3-glucanase is an enzyme that can hydrolyze β-1, 3-glucoside bounds constituting β-1, 3-glucan such as curdlan, laminarin, and yeast cell wall, and generates glucose as the final product via laminarioligo-saccharide. It is expected that the enzyme can be applied to prevention and treatment of plant diseases caused from bacteria because it can perform degradation of cell wall components in filamentous fungi and yeast, and saccharification from marine resources such as seaweed.
There are three kinds of β-1, 3-glucanases which have individual enzymatic features of optimum temperature, and pH. Especially, β-1, 3-glucanase B is expected efficient degradation of yeast β-glucan (see the graph below).
Advantages of thermostable enzymes
Thermostable enzymes have effective reactivity at high temperatures, long-term storage at room temperature, and several other advantages below.
- It has high stability and can be used for a long time.
- The enzymes are expected to be resistant to organic solvents.
- No special treatments are required to prevent bacterial growth in a reaction buffer.
- The enzymes have extremely high reaction specificity compared to chemical reactions.
- The enzymes have higher optimum temperatures, which allows for increase reaction rate.
