Catechins are a type of polyphenol and the primary component responsible for the bitter taste of tea. Specifically, they belong to the flavanols, a sub-family of flavonoids within the polyphenol group. Green tea contains four major types of catechins: epicatechin (EC), epigallocatechin (EGC), epicatechin gallate (ECG), and epigallocatechin gallate (EGCG).
