Soybeans are rich in soy isoflavones such as Daidzein, Glycitein, and Genistein, which are converted by Aspergillus fungi into various molecules useful to humans.

Bioactive substances in fermented soybean foods

Soy isoflavones are detected as modified 8-Hydroxydaidzein, 8-Hydroxyglycitein, and 8-Hydroxygenistein in koji and miso, traditional foods. In recent years, these isoflavones have been reported to exhibit antioxidant, anticancer, melanogenesis suppression, and diabetes paraphernalia activities, attracting new attention.
